Food Allergies Food allergies are extremely common, it seems like everyone is allergic to something. They are very hard to define because some foods have immediate reactions and others react after a few days. Here are two examples of food reactions: Immediate Food Hypersensitivity – This type of reaction is almost immediate, usually a few minutes and no longer than 2 hours after you’ve eaten the food. Delayed Food Hypersensitivity - This type of reaction seems to develop over 1-2 days, and can last for days. Everyday foods, or foods you eat large quantities of seems to trigger Delayed Food Hypersensitivity. People who live in western countries are allergic to dairy products, and people who live in eastern countries are normally fragile to rice or spices.
